Wild Rice with Herbs and Vegetables

This wild rice dish is a nutritious and flavourful meal, perfect for a wholesome dinner. Wild rice, known for its chewy texture and nutty flavour, is combined with colourful vegetables and fresh herbs, creating a delightful and healthy option for any day of the week.

INGREDIENTS:

  • 1 cup wild rice
  • 2 1/2 cups water or vegetable broth
  • 1/2 cup diced carrots
  • 1/2 cup green peas
  • 1/4 cup finely chopped parsley
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

DIRECTIONS:

  • Rinse the wild rice under cold water until the water runs clear.
  • In a medium saucepan, bring the water or broth to a boil. Add the wild rice, reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender and has absorbed most of the liquid.
  • While the rice cooks, sauté the carrots in olive oil over medium heat for about 5 minutes. Add the green peas and cook for an additional 3 minutes, or until the vegetables are just tender.
  • Once the rice is cooked, fluff it with a fork and mix in the sautéed vegetables, parsley, and lemon juice. Season with salt and pepper.
  • Serve warm, garnished with additional parsley if desired.

NOTES:

  • Wild rice can vary in cooking time depending on the brand, so it’s important to check the package instructions and adjust the cooking time as necessary.
  • This dish can be enhanced with the addition of nuts like slivered almonds or walnuts for added texture and flavour.
  • Consider adding a protein like grilled chicken or tofu to make it a complete meal.
