Wild Rice Tabbouleh Salad
WITH TEA HORSE ORGANIC WILD RICE
INGREDIENTS:
- 2 cups of wild rice (previously cooked and cooled)
- 1 bunch chopped curly parsley
- 2 large tomatoes, diced
- 1/2 English cucumber, diced
- 3 ribs of celery, diced
- 1/2 red pepper, diced
- 1/2 small onion
- Juice of 1 large lemon
- 1 garlic clove, minced
- 1/3 cup of Extra Virgin Olive Oil
- 1 tbsp. Dijon Mustard
- 1 tsp. Maple Syrup – to taste
- 1/2 tsp. sea salt
- Freshly grounded black pepper
DIRECTIONS:
- Cook the wild rice per directions on the package. Let cool.
- Finely chop the parsley using a sharp knife and add to a large bowl.
- Finely chop onion, and dice tomatoes, cucumber, celery and red pepper and place into bowl with parsley.
- In another small bowl, whisk lemon juice, minced garlic, olive oil, mustard, maple syrup, salt & pepper.
- Combine all the ingredients thoroughly with the dressing and serve.
