How to Cook
Wild Rice with Herbs and Vegetables
INGREDIENTS:
- 1 cup wild rice
- 2 1/2 cups water or vegetable broth
- 1/2 cup diced carrots
- 1/2 cup green peas
- 1/4 cup finely chopped parsley
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
DIRECTIONS:
- Rinse the wild rice under cold water until the water runs clear.
- In a medium saucepan, bring the water or broth to a boil. Add the wild rice, reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender and has absorbed most of the liquid.
- While the rice cooks, sauté the carrots in olive oil over medium heat for about 5 minutes. Add the green peas and cook for an additional 3 minutes, or until the vegetables are just tender.
- Once the rice is cooked, fluff it with a fork and mix in the sautéed vegetables, parsley, and lemon juice. Season with salt and pepper.
- Serve warm, garnished with additional parsley if desired.
NOTES:
- Wild rice can vary in cooking time depending on the brand, so it’s important to check the package instructions and adjust the cooking time as necessary.
- This dish can be enhanced with the addition of nuts like slivered almonds or walnuts for added texture and flavour.
- Consider adding a protein like grilled chicken or tofu to make it a complete meal.
